Ingredients
  

  • - 1½ lbs baby potatoes or Yukon gold potatoes halved
  • - 2 tbsp olive oil
  • - ½ tsp garlic powder
  • - ½ tsp paprika
  • - Salt and black pepper to taste
  • - 1 cup freshly grated Parmesan cheese
  • - Optional garnish: chopped parsley extra Parmesan

Instructions
 

  • **Preheat Oven:** Preheat oven to 400°F (200°C). Line a baking sheet with parchment or grease well.
  • **Season Potatoes:** In a mixing bowl, toss halved potatoes with olive oil, garlic powder, paprika, salt, and pepper.
  • **Prepare Parmesan Base:** Sprinkle Parmesan cheese evenly over the baking sheet in a thin, even layer where the potatoes will go.
  • **Arrange Potatoes:** Place potatoes cut side down on top of the Parmesan layer, pressing gently so they stick.
  • **Bake:** Bake for 35–40 minutes, until potatoes are tender and the Parmesan is golden and crispy.
  • **Cool & Serve:** Let rest for 5 minutes to firm up the crust, then use a spatula to gently lift and serve. Garnish with parsley and more cheese if desired.
