Ingredients
  

  • - 1 zucchini sliced into thick rounds
  • - 1 red bell pepper cut into chunks
  • - 1 yellow bell pepper cut into chunks
  • - 1 red onion cut into wedges
  • - 8 oz button or cremini mushrooms
  • - 1 cup cherry tomatoes
  • - 2 tbsp olive oil
  • - 1 tbsp balsamic vinegar
  • - 2 cloves garlic minced
  • - 1 tsp dried oregano or Italian seasoning
  • - Salt and black pepper to taste
  • - Fresh parsley or basil for garnish (optional)

Instructions
 

  • In a bowl, whisk together olive oil, balsamic vinegar, garlic, oregano, salt, and pepper.
  • Toss all chopped vegetables in the marinade and let sit for 10 minutes.
  • Thread the veggies onto skewers in a colorful pattern.
  • Preheat grill or grill pan to medium-high.
  • Grill skewers for 10โ€“12 minutes, turning occasionally, until veggies are tender and slightly charred.
