- - 2 cups water or chicken broth
- - 1 tablespoon oil or butter
- - 1/2 teaspoon salt
- - 1 jalapeño finely chopped (or 1/4 tsp red chili flakes)
- - Juice of 1 lime
- - Zest of 1 lime
- - 1/4 cup fresh cilantro finely chopped
In a saucepan, heat oil over medium heat. Add rice and sauté for 1–2 minutes until slightly toasted.
