Ingredients
  

  • - 1 cup long-grain white rice
  • - 2 cups water or chicken broth
  • - 1 tablespoon oil or butter
  • - 1/2 teaspoon salt
  • - 1 jalapeño finely chopped (or 1/4 tsp red chili flakes)
  • - Juice of 1 lime
  • - Zest of 1 lime
  • - 1/4 cup fresh cilantro finely chopped

Instructions
 

  • In a saucepan, heat oil over medium heat. Add rice and sauté for 1–2 minutes until slightly toasted.
  • Add water or broth and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 18–20 minutes or until rice is tender and liquid is absorbed.
  • Fluff rice with a fork. Stir in lime juice, zest, jalapeño or chili flakes, and chopped cilantro.
  • Taste and adjust salt or lime as needed. Serve warm.
