- - 1/4 tsp dried marjoram
- - 1/4 tsp dried basil
- - 1/2 tsp kosher salt
- - 1/4 tsp black pepper

**Prepare the steak and vegetables**: In a skillet, heat 2 tbsp of vegetable oil over medium-high heat. Add diced onions and sliced bell pepper and sauté for 3-4 minutes until softened. Add the thinly sliced ribeye steak, paprika, chili powder, onion powder, garlic powder, thyme, marjoram, basil, salt, and pepper. Cook for 4-5 minutes until the steak is browned and cooked through. Remove from heat and set aside to cool slightly.
**Assemble the egg rolls**: Lay an egg roll wrapper in a diamond shape on a flat surface. Spoon 2-3 tbsp of the steak and vegetable mixture onto the center of the wrapper. Place a slice of cheese over the filling. Fold in the sides and roll tightly, sealing the edges with a little water.
**Cook the egg rolls**:
- **Air Fryer**: Preheat the air fryer to 380°F. Brush the egg rolls lightly with oil and cook for 8 minutes, flipping halfway, until golden and crispy.
- **Deep Frying**: Heat oil to 375°F in a deep fryer or large pot. Fry the egg rolls for 4-5 minutes until golden and crispy.
- **Oven (optional)**: Preheat the oven to 425°F, place the egg rolls on a lined baking sheet, brush with oil, and bake for 15 minutes, flipping halfway through.
**Serve and enjoy**: Serve hot with your choice of dipping sauce, such as ranch, spicy mayo, or au jus.
