  • - Zest of 1 lemon
  • - Juice of ½ lemon
  • - 1 tsp salt
  • - ½ tsp black pepper

Instructions
 

  • **Preheat Oven (Optional)**: If baking, preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • **Mix Ingredients**: In a large bowl, combine turkey, egg, almond flour, garlic, onion, herbs, lemon zest and juice, salt, and pepper. Mix until just combined—don’t overmix.
  • **Form Meatballs**: Use your hands or a scoop to shape 1-inch meatballs (about 20).
  • **Cook**:
  • - **Bake**: Place meatballs on prepared sheet and bake for 18–20 minutes, or until golden and cooked through.
  • - **OR Pan-Fry**: Heat olive oil in a skillet over medium heat. Cook meatballs in batches for 8–10 minutes, turning occasionally until browned and fully cooked.
  • **Serve**: Drizzle with fresh lemon juice and serve with tzatziki, Greek salad, or cauliflower rice.
