Ingredients
  

  • - 1 tablespoon olive oil
  • - 1 large onion diced
  • - 3 garlic cloves minced
  • - 1 ½ pounds ground beef or ground turkey
  • - 2 15 oz cans kidney beans, drained and rinsed
  • - 1 15 oz can black beans, drained and rinsed
  • - 2 14.5 oz cans diced tomatoes
  • - 1 6 oz can tomato paste
  • - 1 cup beef broth or water
  • - 2 tablespoons chili powder
  • - 1 tablespoon ground cumin
  • - 1 teaspoon smoked paprika
  • - ½ teaspoon cayenne pepper optional
  • - Salt and pepper to taste
  • - Optional toppings: shredded cheese sour cream, chopped cilantro, sliced jalapeños

Instructions
 

  • In a skillet over medium heat, heat olive oil. Add diced onion and cook until softened, about 3–4 minutes.
  • Add garlic and cook for another 30 seconds.
  • Add ground beef and cook until browned. Drain excess fat.
  • Transfer beef mixture to the slow cooker.
  • Add beans, diced tomatoes, tomato paste, beef broth, and all spices. Stir well to combine.
  • Cover and cook on **low** for 6–8 hours or **high** for 3–4 hours.
  • Taste and adjust seasoning if needed.
  • Serve hot with your favorite toppings.
