- - 1 tablespoon olive oil
- - 1 large onion diced
- - 3 garlic cloves minced
- - 1 ½ pounds ground beef or ground turkey
- - 2 15 oz cans kidney beans, drained and rinsed
- - 1 15 oz can black beans, drained and rinsed
- - 2 14.5 oz cans diced tomatoes
- - 1 6 oz can tomato paste
- - 1 cup beef broth or water
- - 2 tablespoons chili powder
- - 1 tablespoon ground cumin
- - 1 teaspoon smoked paprika
- - ½ teaspoon cayenne pepper optional
- - Salt and pepper to taste
- - Optional toppings: shredded cheese sour cream, chopped cilantro, sliced jalapeños
In a skillet over medium heat, heat olive oil. Add diced onion and cook until softened, about 3–4 minutes.
Add garlic and cook for another 30 seconds.
Add ground beef and cook until browned. Drain excess fat.
Transfer beef mixture to the slow cooker.
Add beans, diced tomatoes, tomato paste, beef broth, and all spices. Stir well to combine.
Cover and cook on **low** for 6–8 hours or **high** for 3–4 hours.
Taste and adjust seasoning if needed.
