- **For the carrot cake layer**:
- - 1 cup all-purpose flour
- - 1/2 cup brown sugar
- - 1/4 cup granulated sugar
- - 1/2 tsp baking soda
- - 1/4 tsp salt
- - 1/2 tsp ground cinnamon
- - 1/4 tsp nutmeg
- - 1/4 cup vegetable oil
- - 1 egg
- - 1 cup finely grated carrots
- - 1/2 cup chopped walnuts or pecans optional
- **For the cheesecake layer**:
- - 8 oz cream cheese softened
- - 1/4 cup granulated sugar
- - 1 egg
- - 1/2 tsp vanilla extract
Preheat oven to 350°F (175°C). Line a 9x9-inch pan with parchment paper.
In a large bowl, mix flour, sugars, baking soda, salt, and spices.
Stir in oil and egg until combined. Fold in grated carrots and nuts (if using). Set aside.
In another bowl, beat cream cheese and sugar until smooth. Add egg and vanilla and mix until creamy.
Spread half of the carrot cake batter into the prepared pan.
Gently spread the cheesecake layer over it.
Drop spoonfuls of the remaining carrot cake batter on top and lightly swirl with a knife.
Bake for 35–40 minutes or until the center is set and a toothpick comes out mostly clean.
Cool completely, then refrigerate for at least 2 hours before slicing into bars.
