Ingredients
  

  • **For the carrot cake layer**:
  • - 1 cup all-purpose flour
  • - 1/2 cup brown sugar
  • - 1/4 cup granulated sugar
  • - 1/2 tsp baking soda
  • - 1/4 tsp salt
  • - 1/2 tsp ground cinnamon
  • - 1/4 tsp nutmeg
  • - 1/4 cup vegetable oil
  • - 1 egg
  • - 1 cup finely grated carrots
  • - 1/2 cup chopped walnuts or pecans optional
  • **For the cheesecake layer**:
  • - 8 oz cream cheese softened
  • - 1/4 cup granulated sugar
  • - 1 egg
  • - 1/2 tsp vanilla extract

Instructions
 

  • Preheat oven to 350°F (175°C). Line a 9x9-inch pan with parchment paper.
  • In a large bowl, mix flour, sugars, baking soda, salt, and spices.
  • Stir in oil and egg until combined. Fold in grated carrots and nuts (if using). Set aside.
  • In another bowl, beat cream cheese and sugar until smooth. Add egg and vanilla and mix until creamy.
  • Spread half of the carrot cake batter into the prepared pan.
  • Gently spread the cheesecake layer over it.
  • Drop spoonfuls of the remaining carrot cake batter on top and lightly swirl with a knife.
  • Bake for 35–40 minutes or until the center is set and a toothpick comes out mostly clean.
  • Cool completely, then refrigerate for at least 2 hours before slicing into bars.
