- **For the cookies:**
- - 1 cup unsalted butter softened
- - 1 cup granulated sugar
- - 1 large egg
- - 1 tsp vanilla extract
- - ½ tsp almond extract optional
- - 2 ½ cups all-purpose flour
- - ½ tsp baking powder
- - ¼ tsp salt
- **For the icing optional:**
- - 2 cups powdered sugar
- - 2–3 tbsp milk
- - 1 tsp vanilla extract
- - Food coloring pastel colors
- - Sprinkles optional
In a large bowl, cream together butter and sugar until light and fluffy.
Add egg, vanilla, and almond extract (if using). Beat until combined.
In a separate bowl, whisk flour, baking powder, and salt. Gradually add to wet mixture.
Form dough into a disk, wrap in plastic, and chill for 30–60 minutes.
Preheat oven to 350°F (175°C). Roll out dough on floured surface to ¼ inch thickness.
Cut into Easter shapes and place on parchment-lined baking sheets.
Bake for 8–10 minutes or until edges are just lightly golden. Cool on wire racks.
For icing: mix powdered sugar, milk, and vanilla until smooth. Divide and tint with food coloring.
Decorate cooled cookies and add sprinkles if desired. Let icing set before serving.
