Ingredients
  

  • **For the cookies:**
  • - 1 cup unsalted butter softened
  • - 1 cup granulated sugar
  • - 1 large egg
  • - 1 tsp vanilla extract
  • - ½ tsp almond extract optional
  • - 2 ½ cups all-purpose flour
  • - ½ tsp baking powder
  • - ¼ tsp salt
  • **For the icing optional:**
  • - 2 cups powdered sugar
  • - 2–3 tbsp milk
  • - 1 tsp vanilla extract
  • - Food coloring pastel colors
  • - Sprinkles optional

Instructions
 

  • In a large bowl, cream together butter and sugar until light and fluffy.
  • Add egg, vanilla, and almond extract (if using). Beat until combined.
  • In a separate bowl, whisk flour, baking powder, and salt. Gradually add to wet mixture.
  • Form dough into a disk, wrap in plastic, and chill for 30–60 minutes.
  • Preheat oven to 350°F (175°C). Roll out dough on floured surface to ¼ inch thickness.
  • Cut into Easter shapes and place on parchment-lined baking sheets.
  • Bake for 8–10 minutes or until edges are just lightly golden. Cool on wire racks.
  • For icing: mix powdered sugar, milk, and vanilla until smooth. Divide and tint with food coloring.
  • Decorate cooled cookies and add sprinkles if desired. Let icing set before serving.
