- 1 pound breakfast sausage ground pork or chicken - 6 large eggs - 1 cup shredded cheddar cheese - 1/2 cup crispy hash browns - 1 package egg roll wrappers - Vegetable oil for frying - Salt and pepper to taste - 1 tablespoon butter - 1/4 cup half and half cream optional
In a frying pan, cook the breakfast sausage until browned and fully cooked. Set aside.
In the same pan, scramble the eggs, adding salt and pepper to taste. Optionally add 1/4 cup of half and half cream for a fluffier texture.
Stir in the cooked sausage, hash browns, and shredded cheddar cheese. Set the mixture aside to cool slightly.
Lay an egg roll wrapper diagonally on a clean surface. Place a spoonful of the filling in the center.
Fold the bottom corner over the filling, then fold in the side corners. Roll tightly and seal the top corner with water.
