Ingredients
  

  • - 2 cups cooked shredded chicken (rotisserie works great)
  • - 1/2 cup plain Greek yogurt whole milk or 2%
  • - 1 tbsp Dijon mustard
  • - 1/2 tsp garlic powder
  • - 1/2 tsp onion powder
  • - Salt and pepper to taste
  • - 1 stalk celery finely chopped
  • - 1/4 red onion finely chopped
  • - 1/2 cup red grapes halved
  • - 2 tbsp chopped fresh parsley or dill optional
  • - 1 tbsp lemon juice optional, for extra zing

Instructions
 

  • In a large bowl, mix Greek yogurt, Dijon mustard, garlic powder, onion powder, lemon juice (if using), salt, and pepper until smooth.
  • Add in the shredded chicken, celery, red onion, and grapes.
  • Toss gently until everything is evenly coated in the yogurt mixture.
  • Stir in fresh herbs, if using.
  • Taste and adjust seasoning as needed.
  • Serve chilled, on its own, in lettuce wraps, over salad greens, or in a sandwich.
