Equipment

  • - Skillet or griddle
  • - Spatula
  • - Cutting board
  • - Knife

Ingredients

  • - 4 8-inch flour tortillas
  • - 1 lb. ground beef lean 90/10 or 80/20 blend
  • - 2 tablespoons taco seasoning
  • - 1/2 cup water
  • - 1 can 15-ounce nacho cheese sauce
  • - 2 cups Mexican rice prepared
  • - 2 tablespoons mayonnaise
  • - 1 tablespoon chipotle sauce
  • - 1/2 cup sour cream
  • - 1 cup tortilla strips
  • - 2 cups shredded Colby Jack cheese

Instructions

  • **Cook the Ground Beef**: In a skillet, cook the ground beef over medium heat. Drain excess fat and add taco seasoning and water. Stir until the beef is well-coated with the seasoning mixture. Let it simmer for a few minutes until fully cooked.
  • **Prepare the Burrito**: Warm the flour tortillas in a skillet or microwave for a few seconds. Place a tortilla flat on a clean surface.
  • **Assemble the Burrito**: Spread a layer of nacho cheese sauce in the center of the tortilla. Add the seasoned ground beef, Mexican rice, sour cream, chipotle sauce, and tortilla strips. Top with shredded cheese.
  • **Fold the Burrito**: Fold in the sides of the tortilla and roll it up tightly to secure the fillings.
  • **Grill the Burrito**: Heat a skillet or griddle over medium heat. Place the burrito seam-side down and cook for 3-4 minutes on each side until the tortilla is golden brown and crispy.
  • **Optional Extra Crunch**: In the last minute of grilling, sprinkle extra shredded cheese on the outside of the burrito and allow it to melt for a cheesy crust.
