Ingredients
  

  • - 1 ½ cups rolled oats
  • - 1 cup all-purpose flour
  • - 1 tsp baking powder
  • - 1 tsp baking soda
  • - 1 tsp cinnamon
  • - Pinch of salt
  • - 2 large eggs
  • - ½ cup brown sugar
  • - ¼ cup melted butter or oil
  • - ½ cup milk or plant-based milk
  • - 2 medium apples Granny Smith or Honeycrisp recommended, peeled, cored, and diced

Instructions
 

  • Preheat your oven to 375°F (190°C) and lightly grease a 12-cup muffin tin.
  • In a large mixing bowl, combine dry ingredients: oats, flour, baking powder, baking soda, cinnamon, and salt.
  • In another bowl, whisk together eggs, brown sugar, melted butter, and milk.
  • Gradually fold the wet mixture into the dry ingredients, being careful not to overmix.
  • Gently fold in the diced apples.
  • Spoon the batter into the muffin tin, filling each cup about three-quarters full.
  • Bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
