- - 1 ½ cups rolled oats
- - 1 cup all-purpose flour
- - 1 tsp baking powder
- - 1 tsp baking soda
- - 1 tsp cinnamon
- - Pinch of salt
- - 2 large eggs
- - ½ cup brown sugar
- - ¼ cup melted butter or oil
- - ½ cup milk or plant-based milk
- - 2 medium apples Granny Smith or Honeycrisp recommended, peeled, cored, and diced
Preheat your oven to 375°F (190°C) and lightly grease a 12-cup muffin tin.
In a large mixing bowl, combine dry ingredients: oats, flour, baking powder, baking soda, cinnamon, and salt.
In another bowl, whisk together eggs, brown sugar, melted butter, and milk.
Gradually fold the wet mixture into the dry ingredients, being careful not to overmix.
Gently fold in the diced apples.
Spoon the batter into the muffin tin, filling each cup about three-quarters full.
Bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
