Ingredients
  

  • - Dates – 6-8 pitted and chopped
  • - Roasted gram – 2 tablespoons
  • - Almonds – 10-12 chopped
  • - Olper’s Milk or any milk – 1¼ cups (divided)
  • - Sugar – 2 tablespoons adjust to taste
  • - Custard powder – 1½ tablespoons
  • - Basil seeds – 2 tablespoons soaked
  • - Crushed ice – as needed
  • - Pistachios – sliced for garnish

Instructions
 

  • **Soak the Ingredients**: In a bowl, combine dates, roasted gram, and almonds. Pour in 1 cup of milk and let soak for at least 1 hour.
  • **Blend**: Transfer the soaked mixture to a blender and blend until smooth. Set aside.
  • **Prepare the Base**: In a wok or saucepan, heat the remaining 1 cup of milk until it boils. Add the blended date mixture and stir well.
  • **Sweeten and Thicken**: Add sugar and mix until dissolved. In a separate bowl, mix custard powder with ¼ cup of milk until smooth. Slowly pour this into the boiling milk mixture, stirring continuously. Cook for 2-3 minutes on low heat until slightly thickened.
  • **Assemble**: In a serving jug, add soaked basil seeds and crushed ice. Pour the date milk mixture over and stir well.
  • **Garnish and Serve**: Top with sliced pistachios and extra dates. Serve chilled.
