Ingredients
  

  • - **Sushi rice**: 1 1/2 cups cooked
  • - **Salmon**: 1 1/2 pounds cooked
  • - **Imitation crab**: 1 cup chopped
  • - **Cream cheese**: 8 oz
  • - **Sriracha mayo**: 1/4 cup
  • - **Furikake seasoning**: 1/4 cup
  • - **Nori sheets**: 6-8 sheets
  • **For the sushi rice base**:
  • - **Cooked short grain rice**: 4 cups about 1.5 cups uncooked
  • - **Rice vinegar**: 1/4 cup
  • - **Sugar**: 2 tablespoons
  • - **Salt**: 1 teaspoon

Instructions
 

  • **Prepare Sushi Rice**: Cook sushi rice according to package instructions. Once cooked, transfer to a large bowl. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Stir into the warm rice and mix gently to coat. Set aside to cool.
  • **Prepare the Salmon**: Preheat oven to 375°F (190°C) or air fryer to 400°F (200°C). Bake the salmon for 15-17 minutes or air fry for 10-12 minutes until flaky. Shred the salmon into small pieces.
  • **Make the Creamy Salmon Mixture**: In a bowl, combine the shredded salmon, chopped imitation crab, cream cheese, and sriracha mayo. Mix well.
  • **Assemble the Bake**: Preheat oven to 400°F (200°C). In a baking dish, press the cooled sushi rice into an even layer. Sprinkle furikake seasoning on top of the rice.
  • Spread the creamy salmon mixture evenly over the rice, smoothing it out to cover the entire surface.
  • **Bake**: Bake for 10-15 minutes, then broil for 2-3 minutes to get a golden-brown top.
  • **Garnish**: Once out of the oven, top with crumbled nori sheets, additional furikake seasoning, and any other desired toppings like avocado, green onions, or cucumber.
