- **For the bulgogi beef:**
- - 1 lb thinly sliced ribeye or sirloin beef
- - 1/4 cup soy sauce
- - 2 tablespoons brown sugar
- - 1 tablespoon sesame oil
- - 2 cloves garlic minced
- - 1 teaspoon grated ginger
- - 1 tablespoon rice vinegar
- - 1 teaspoon gochujang Korean chili paste, optional for heat
- - 1/2 small onion finely sliced
- - 1 green onion chopped
- - 1 teaspoon sesame seeds
- **For the wraps:**
- - 1 head of butter lettuce or green leaf lettuce
- - 1 carrot julienned
- - 1 cucumber julienned
- - Cooked rice optional, for filling
- - Gochujang or ssamjang sauce for serving
- - Extra sesame seeds and green onions for garnish
**Marinate the beef:**
In a bowl, combine soy sauce, brown sugar, sesame oil, garlic, ginger, rice vinegar, gochujang, and onions. Add sliced beef and toss to coat. Marinate for at least 30 minutes or up to 8 hours in the fridge.
**Cook the beef:**
