- - 1.5 lbs boneless skinless chicken breasts or thighs, cut into 1-inch cubes
- - 1/4 cup olive oil
- - Juice and zest of 1 lemon
- - 2 tablespoons chopped fresh basil
- - 2 cloves garlic minced
- - 1 teaspoon Dijon mustard optional, for depth
- - 1/2 teaspoon salt
- - 1/4 teaspoon black pepper
In a bowl or bag, whisk together olive oil, lemon juice, zest, basil, garlic, Dijon mustard (if using), salt, and pepper.
Add the chicken pieces and toss to coat. Marinate in the fridge for at least 30 minutes, up to 4 hours.
If using wooden skewers, soak them in water for 20–30 minutes to prevent burning.
Thread chicken onto skewers. Preheat grill to medium-high heat.
Grill skewers for 10–15 minutes, turning occasionally, until chicken is cooked through and slightly charred.
