- - 2 ripe mangoes peeled and chopped
- - 1/2 cup coconut milk full-fat or light
- - 1 tbsp honey or maple syrup optional, for sweetness
- - 1/2 tsp vanilla extract optional
**Blend the Ingredients**: In a blender or food processor, combine the chopped mangoes, coconut milk, honey or maple syrup (if using), and vanilla extract. Blend until smooth and creamy.
**Pour into Molds**: Pour the mango mixture into popsicle molds, filling each mold to the top. Tap the molds gently on the counter to remove any air bubbles.
**Freeze**: Insert sticks into the molds and freeze for at least 4 hours, or until the popsicles are fully set.
**Serve**: To release the popsicles, run warm water over the outside of the molds for a few seconds. Gently pull the popsicles out and enjoy!
