Ingredients
  

  • - 2 large eggs
  • - 1/2 cup unsalted butter melted
  • - 1 cup granulated sugar
  • - 1 tsp peppermint extract
  • - 4 oz unsweetened chocolate melted and cooled
  • - 1/4 cup all-purpose flour optional for flour version
  • - 1/4 tsp salt
  • **Mint Frosting**:
  • - 1/2 cup unsalted butter softened
  • - 2 cups powdered sugar
  • - 1 tsp peppermint extract
  • - Green food coloring optional
  • **Chocolate Topping**:
  • - 4 oz unsweetened chocolate melted
  • - 1/4 cup unsalted butter melted

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease an 8x8-inch baking pan and line it with parchment paper.
  • In a medium bowl, whisk together the eggs, melted butter, and granulated sugar until smooth.
  • Stir in the peppermint extract and melted chocolate. If using flour, add the flour and salt, and fold everything together until just combined.
  • Pour the batter into the prepared pan and spread it evenly. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Let the bars cool completely in the pan.
  • While the bars are cooling, make the mint frosting. Beat softened butter, powdered sugar, and peppermint extract until light and fluffy. Add a drop of green food coloring if desired.
  • Spread the mint frosting over the cooled bars.
  • In a separate bowl, melt chocolate and butter together to make the topping. Once smooth, pour it over the mint frosting and spread evenly.
  • Chill the bars in the fridge for about 1 hour to allow the topping to set.
  • Once set, cut into squares and serve.
