- - 7 oz 200g marzipan, grated or finely chopped
- - ½ cup 100g granulated sugar
- - 1 large egg white
- - ½ tsp almond extract
- - ½ cup 60g all-purpose flour
- - ½ tsp baking powder
- - ¼ tsp salt
- - ¼ cup 30g powdered sugar (for dusting)
- - ½ cup sliced almonds optional, for garnish
Preheat your oven to **325°F (165°C)** and line a baking sheet with parchment paper.
In a mixing bowl, combine the grated marzipan, granulated sugar, and egg white. Mix until smooth.
Add the almond extract and mix again.
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this to the marzipan mixture, stirring until a soft dough forms.
Roll the dough into small balls (about 1-inch in diameter) and place them on the prepared baking sheet.
Lightly press each ball with your fingers or the back of a spoon. Optionally, press a few sliced almonds on top.
Bake for **12-15 minutes**, or until the edges are lightly golden.
Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.
Once cooled, dust with powdered sugar before serving.
