Ingredients
  

  • - 1/2 cucumber thinly sliced
  • - 10 fresh mint leaves
  • - 1–2 tbsp honey or simple syrup adjust to taste
  • - Juice of 1 lime
  • - Sparkling water or club soda about 1 cup
  • - Ice cubes
  • - Optional 2 oz white rum per serving
  • - Extra mint and cucumber for garnish

Instructions
 

  • In each glass or a cocktail shaker, muddle cucumber slices, mint leaves, and honey/simple syrup until fragrant and juicy.
  • Add lime juice and mix well.
  • Fill glasses with ice and pour the mixture over the ice.
  • Top with sparkling water (and rum, if using).
  • Stir gently, garnish with extra mint and cucumber slices, and serve immediately.
