- - 4 large bell peppers any color
- - 1 lb ground beef
- - 1/2 cup quinoa uncooked (or 1 1/2 cups cooked)
- - 1 small onion diced
- - 2 cloves garlic minced
- - 1 cup canned diced tomatoes drained
- - 1/2 tsp cumin
- - 1/2 tsp smoked paprika
- - Salt & pepper to taste
- - 1/2 cup shredded cheese cheddar, Monterey Jack, or mozzarella
- - 1 tbsp olive oil
- - 1 tbsp chopped fresh parsley optional, for garnish
- Preheat oven to 375°F (190°C). 
- Cut tops off the bell peppers and remove seeds and membranes. Set aside. 
- Cook quinoa according to package instructions and set aside. 
- Heat olive oil in a skillet over medium heat. Sauté onions until soft, about 3 minutes. Add garlic and cook 1 minute more. 
- Add ground beef, breaking it up as it cooks. Once browned, stir in tomatoes, cooked quinoa, cumin, paprika, salt, and pepper. Let simmer for 5 minutes. 
- Stuff each pepper with the beef-quinoa mixture and place upright in a baking dish. 
- Sprinkle cheese over the top of each stuffed pepper. 
- Cover loosely with foil and bake for 25 minutes. Remove foil and bake an additional 10 minutes, or until cheese is bubbly and peppers are tender. 
- Garnish with fresh parsley if desired. Serve warm.
