  • - 4 large bell peppers any color
  • - 1 lb ground beef
  • - 1/2 cup quinoa uncooked (or 1 1/2 cups cooked)
  • - 1 small onion diced
  • - 2 cloves garlic minced
  • - 1 cup canned diced tomatoes drained
  • - 1/2 tsp cumin
  • - 1/2 tsp smoked paprika
  • - Salt & pepper to taste
  • - 1/2 cup shredded cheese cheddar, Monterey Jack, or mozzarella
  • - 1 tbsp olive oil
  • - 1 tbsp chopped fresh parsley optional, for garnish

Instructions

  • Preheat oven to 375°F (190°C).
  • Cut tops off the bell peppers and remove seeds and membranes. Set aside.
  • Cook quinoa according to package instructions and set aside.
  • Heat olive oil in a skillet over medium heat. Sauté onions until soft, about 3 minutes. Add garlic and cook 1 minute more.

  • Stuff each pepper with the beef-quinoa mixture and place upright in a baking dish.
  • Sprinkle cheese over the top of each stuffed pepper.
  • Cover loosely with foil and bake for 25 minutes. Remove foil and bake an additional 10 minutes, or until cheese is bubbly and peppers are tender.
  • Garnish with fresh parsley if desired. Serve warm.
