- - 4 large bell peppers any color
- - 1 lb ground beef
- - 1/2 cup quinoa uncooked (or 1 1/2 cups cooked)
- - 1 small onion diced
- - 2 cloves garlic minced
- - 1 cup canned diced tomatoes drained
- - 1/2 tsp cumin
- - 1/2 tsp smoked paprika
- - Salt & pepper to taste
- - 1/2 cup shredded cheese cheddar, Monterey Jack, or mozzarella
- - 1 tbsp olive oil
- - 1 tbsp chopped fresh parsley optional, for garnish
Preheat oven to 375°F (190°C).
Cut tops off the bell peppers and remove seeds and membranes. Set aside.
Cook quinoa according to package instructions and set aside.
Heat olive oil in a skillet over medium heat. Sauté onions until soft, about 3 minutes. Add garlic and cook 1 minute more.
Add ground beef, breaking it up as it cooks. Once browned, stir in tomatoes, cooked quinoa, cumin, paprika, salt, and pepper. Let simmer for 5 minutes.
Stuff each pepper with the beef-quinoa mixture and place upright in a baking dish.
Sprinkle cheese over the top of each stuffed pepper.
Cover loosely with foil and bake for 25 minutes. Remove foil and bake an additional 10 minutes, or until cheese is bubbly and peppers are tender.
Garnish with fresh parsley if desired. Serve warm.
