  • - 8 oz pasta penne, fusilli, or any short pasta
  • - 1 block 7–8 oz feta cheese
  • - 2 cups cherry tomatoes
  • - 3 cloves garlic minced
  • - ¼ cup olive oil
  • - ½ tsp crushed red pepper flakes optional
  • - Salt and black pepper to taste
  • - Fresh basil leaves chopped (for garnish)
  • - Optional: ¼ cup reserved pasta water

Instructions
 

  • **Preheat Oven:** Set oven to 400°F (200°C).
  • **Assemble Baking Dish:** Place feta in the center of a baking dish. Surround it with cherry tomatoes and garlic. Drizzle olive oil over everything, and sprinkle with red pepper flakes, salt, and pepper.
  • **Bake:** Roast for 30–35 minutes, until tomatoes burst and feta is soft and golden.
  • **Cook Pasta:** Meanwhile, cook pasta in salted water until al dente. Drain, reserving ¼ cup of the pasta water if needed.
  • **Mix Together:** Remove the baking dish from the oven. Mash the feta and tomatoes with a spoon until creamy. Add cooked pasta and toss to coat. Add a splash of pasta water for a silkier sauce, if desired.
  • **Serve:** Garnish with fresh basil and serve immediately.
